Join award-winning chefs as they tour Footscray markets in search of the freshest ingredients, then follow them back into VU's state-of-the-art kitchen facilities, where they'll share the secrets of old world food preparation.

Learn about traditional methods such as how to perfect pastes, condiments, relishes and chutneys. Discover new techniques and alternative cooking methods and be influenced by the unusual variety of seasonal ingredients and rich diversity of Footscray's markets.
