Overview

This unit will provide students with the opportunity to acquire a skills-based, practical understanding of the planning, management and operational requirements of running a successful and sustainable hotel. Working individually and in teams, students to create operational plans and strategies that balance the general business operations of a hotel with contemporary environmentally sustainable approaches.

Learning Outcomes

On successful completion of this unit, students will be able to:

  1. Locate and interpret hotel environmental and sustainable benchmarks to respond to short and long term operational issues and problems as they relate to sustainability within hotel operations;
  2. Develop a hotel operational plan, including resourcing requirements, work health and safety, environmental sustainability and a monitoring/review cycle;
  3. Strategise and communicate a plan to minimise food and beverage waste and improve efficiencies within a hotel environment; and
  4. Identify appropriate models of management to support successful and sustainable hotel operations.
