COVID-19 has impacted infection control standards in a range of organisations and industries across the country. Learn essential skills and knowledge to decrease the risk and transmission of infection while undertaking your daily duties, with an Infection Control Skill Set (Food Handling) course at Victoria University Polytechnic.
This course is suitable if you are engaged in direct customer interactions in the food-handling sector, including in cafes, restaurants, pubs, clubs or hotels.
This nationally accredited training includes learning to implement standard and transmission-based precautions, and responding to infection risks.
In this course, you will gain knowledge and skills in:
- hand hygiene practices
- effective surface cleaning
- use of personal protective equipment
- disposal of contaminated waste
- hazard identification, control and reporting
- appropriate protocols and responses in the event of an incident
- the basis of infection and transmission.
You must be currently employed (paid or voluntary) in Victoria in a customer-facing role to take part. You can only complete one Industry Skill Set program.

On successfully completion of this course, students will be issued a Statement of Attainment for the nationally recognised skillset: HLTSS00066 Infection control Skill Set (Food Handling) which includes the unit of competence: HLTINFCOV001 Comply with infection prevention and control policies and procedures.
This Infection Control Skill Set in the Food Handling Industry course provides the learner a set of skills to follow organisational infection prevention and control policies and procedures, including implementing standard and transmission-based precautions and responding to infection risks in organisations operating in the food handling industry.
Participants will work through the online self-paced learning resources with support from a VU Polytechnic qualified staff member.
This program is specifically designed for food handling customer faced workplaces. It is delivered through VU Polytechnic's Learning Management System, VU Collaborate, which provides an interactive online available 24/7 over a maximum of a twenty-one (21) days. It is recommended participants spend a minimum of approximately six (6) hours progressing through the interactive self-paced learning via the VU Polytechnic online modules. In addition, students engage with a qualified VU Polytechnic teacher through 1.5 hour live chat sessions conducted twice weekly. Participants use their workplace to apply the knowledge skills they have developed and to complete practical assessment requirements.
Admission & pathways
Meeting the minimum admission requirements does not guarantee you entry into this course. Some courses receive more applications than the number of places available. In this situation we will also assess your education, work and other relevant experience.
This course has no specific admission requirements. However, it is expected applicants will have basic computer skills and must be employed or volunteer in a customer-facing food handling role. Participants will require access to their workplace to complete assessments and confirmation of employer agreement to third party verification in the workplace will be requested.
All applicants will be required to complete a VET Pre-Training Review, which has been specifically designed for Infection Control Skill Sets (COVID-19). During this process, the selection officer will be able to determine if the applicant will require learning support. This is critical as the course has a component of E-learning and participants will require sufficient English Language Skills to work through the online learning modules, for students who don't have the adequate reading and writing skills another training model may need to be explored.
